Lobster Cobb Salad
Salad Dressing Ingredients:
1/4 cup extra-virgin olive oil
2 tbsp sherry vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp blue cheese
1 clove garlic, minced
1 tsp Kosher salt, to taste
1/4 tsp pepper, to taste
Salad Ingredients:
1 head romaine lettuce, chopped
1 bunch watercress, some of the stems trimmed, chopped
6 oz cooked lobster meat, chopped
2 oz. blue cheese
6 strips cooked bacon, chopped
3 hard-boiled eggs, diced
2 med tomatoes, seeded, and diced
1 avocado, peeled, pitted, and cut into cubes
1 c. corn kernels, salt & pepper to taste
Combine dressing ingredients in a blender or with a whisk, blending until creamy. Set aside or store in an airtight container until ready to use. Combine salad ingredients and top with dressing, tossing to coat.
