New York Strip Steak with Balsamic Reduction

1/2 cup of Balsamic Vinegar {make Balsamic Reduction - see below}

2 NY Strip Steaks

2 teaspoons of olive oil

salt & pepper

Instructions

Make the Balsamic Reduction following the simple instructions below. Place in refrigerator and let set.

Next, remove 2 NY Strip Steaks from refrigerator and let sit for 5-10 minutes to take the chill off.

Next, season both sides of the steak with 1/2 teaspoon of olive oil, salt, & pepper.

Get grill ready to medium high heat. Grill each side for 3-5 minutes, for medium rare.

Remove from grill and let sit for 2-3 minutes to let juices set then serve with a drizzle of Balsamic Reduction.

Balsamic Reduction

1 cup of good quality balsamic vinegar

Instructions

Pour balsamic vinegar into a small saucepan.

Turn heat to medium high and bring vinegar to a boil.

Once boiling, reduce to simmer and let simmer for about 5-7 minutes until vinegar has reduced down. Stir occasionally. {be sure to keep an eye on it because it can burn quickly} You will know it is done if it coats the back of spoon.

Remove from heat.

Let reduction cool and serve or transfer to an air tight container and store in refrigerator. If reduction hardens after being in refrigerator for too long just place container in a bowl filled with warm water to heat up the reduction
