Oven Roasted Halibut with Red Pesto
1/8 pound (60 g) sun-dried tomatoes in oil,drained
1 garlic clove,peeled and chopped
1/2 oz (15 g) grated Parmesan cheese
8 fresh basil leaves,washed and chopped
1 oz (30 g) pine nuts
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
4 halibut steaks
2 tablespoons vegetable oil
2 tablespoons freshly squeezed lemon juice
scallions,shredded,to garnish
salt and freshly ground black pepper
Step 1
Combine dried tomatoes, garlic, cheese, basil, pine nuts and olive oil in blender or food processor. Add seasonings ,lemon juice and blend.
Step 2
Season both sides of fish steaks with salt and black pepper and brush with vegetable oil. Put a round baking dish in the base of turbo oven to catch any juices
Step 3
Arrange the high grilling rack in the oven and preheat the turbo oven to 392°F(200°C) Put the halibut steaks on high grilling rack. Grill for 4 minutes, then turn over and cook for 5-7 minutes more, until fish is almost cooked.
Step 4
Spread each halibut steak with red pesto. Cook halibut for 3-5 minutes, until fish is tender and pesto is starting to brown. Serve oven roasted halibut at once, garnished with shredded scallion.
