Sheet Pan Roasted Fish with Broccoli and Tomatoes
2 (6-oz) cod fillets
2 Tbsp olive oil, divided
1 tsp Italian seasoning
1 cup halved grape tomatoes
1 crown broccoli, cut into florets
2 cloves garlic, minced
1 tsp lemon zest
1½ Tbsp fresh lemon juice
2 Tbsp chopped fresh basil
½ Tbsp honey
Preheat oven to 425°F. Place fish on a rimmed baking sheet. Drizzle with ½ Tbsp oil, and sprinkle with Italian seasoning. Season lightly with salt and pepper.
Toss together tomatoes, broccoli, 1½ Tbsp oil, and garlic in a large bowl; season lightly with salt and pepper. Arrange tomato mixture around fish.
Bake 15 to 20 minutes or until fish flakes with a fork.
Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and tomato mixture.
